About the coffee

In 2001, Diever decided to go to Putumayo with a neighbor to work for a year and a half and left his property to the family. After some not very good experiences that led him to return to San Agustín, he went back to growing beans and tomatoes and tending to his small coffee plot.
In mid-2002, he met his future wife, Estela Guzmán, and that year they made their relationship official and began working hard together. Their main idea was to expand the coffee farm and over the next four years they managed to buy some very small plots from their neighbors thanks to some savings and a loan from the agricultural bank. Their dream came true and the small plots of land they acquired formed what is now known as the Las Juntas farm.

As was common practice in the early days, their production of wet and dry coffee was sold on the village square to anyone who happened to be there to buy it. After years of selling on the local market at absurdly low prices, they were finally able to join the Los Naranjos group in 2010 and open up a slightly more differentiated market for their coffees within the conventional specialty modality.
Over the years, due to the difficulties in combating leaf rust on their Caturra and in the hope of improving the quality of the cups, Diever and Estela decided to look for a more resistant and productive variety with which to replace their suffering Cauttra.
Their first investment was the purchase of 700 new Pink Bourbon trees from the San Adolfo region in Huila. Since then, they have used these plants to propagate new seedlings that they have planted throughout the farm.

Process: Washed
The cherries are harvested every 21 days on three consecutive days. The coffee from the first and second days is fermented for one and two days respectively before all the coffee is de-powdered on the third day along with the coffee picked that day. Once all the coffee is depowdered, it is dry fermented in ceramic tiled tanks for 20 hours. The coffee is then washed and allowed to drain for a few hours before going into a solar dryer for 15-20 days.
